They're heated by a thermo-tube heat transfer system, which warms a large surface area while reducing the heat per square inch, so oil doesn't become overloaded or damaged.
Throughout the frying process, operators can track the Dean 2PRG50T floor-model gas fryer's temperatures with the 1-degree-Fahrenheit compensating temperature probe and adjust temperatures with the millivolt controller. Because this unit doesn't have a filter, the wide cold zone is essential for collecting sediment to maintain a clean unit. The cold zone traps sediment away from the cooking area, and the front-sloping bottom helps move buildup toward the 1.25-inch drain valve for removal.
