The Vulcan Gas Double-Stack Convection Oven (flagship series VC44GD and VC44GC) is one of the highest-demand asset classes in the commercial restaurant and bakery space. Joining two full-size baking chambers vertically into a single mobile structure allows high-output operations to double their cooking throughput to 10 full-size sheet pans without taking up an extra inch of valuable hood space.

Core Engineering & Performance Features

  • Completely Independent Deck Cooking: Each oven chamber operates on its own dedicated gas valve, electronic ignition, and control setup. You can easily roast dense proteins or meats at 400°F (204°C) in one deck while simultaneously baking delicate pastries or proofing rolls at 325°F (163°C) in the other.

  • Balanced Airflow Dynamics: Equipped with a 1/2 HP two-speed blower motor per deck. The fan evenly recirculates 50,000 BTU/hr of heat (100,000 BTU/hr total for the stack) past all internal rack positions, ensuring uniform browning and crust development with zero pan rotation required mid-cycle.

  • Simultaneous Door Mechanization: Built with a heavy-duty single handle on each deck that smoothly swings both the left and right doors open at once. Double-pane glass inspection windows allow staff to easily monitor baking progress without releasing chamber heat.

  • Rapid Oven Cool-Down Switch: Includes an "Oven Cool" setting on the master control panel that forces the internal fan to run continuously while the doors are open, quickly dropping the cabinet temperature for fast cleaning or temperature-shifting recipes.
